Day 348

I went to work and did pretty well for the day shift. Tim came in and we ate dinner/lunch together and had a glass of wine.

For Early Dinner: I finally tried the seafood cioppino at my work. It had clams, white fish, shrimp and scallops and it was really really good!

I ended up hanging out with mom and we went to Bastille, a french restaurant in Ballard. I did have anything to eat, except I did share a Creme Brulee with her and it was decent.

Later Cassi, Tim, Kyle, Jenna, and Jules and I went out for a drink up on the hill and had a really good time. We ended up going and getting some more food! Yeah I had like three dinners. I munched on some tortilla chips and had a couple of Cassi's fries. I was a bad, bad girl :/

Day 348

So I worked all day yesterday and did pretty well. I was oddly in a cleaning mood and decided to scrub down most of the restaurant. When I woke up this morning my arm was a little sore.

For Lunch: Just some salad with romaine, carrots, onion, white beans, and croutons in a house vinaigrette. Later on I also had some chicken and broccoli.

For Dinner: Chicken and beans in a tortilla with salsa.

I went straight to bed and was exhausted and my knee was a little swollen. I need to ice it, but it's hard to put ice on my body when all I want to do is go to bed.

I woke up this morning only to see how rainy it was outside. Gross.

Day 347

For Breakfast: A pesto omelet with bell pepper and zucchini. Coffee.

I work a double today and I hope I can make some good money. Cassi has the day off and is going to send off her application to UCSF today. Wahoo!!!! The weather is starting to turn crummy and that's not cool, I still have so many things to do during the summer and I promised Jenna we would have a bonfire on the beach at Golden Gardens and I would prefer to not do that in the Rain!!!!

Day 346

For Breakfast: Coffee. An omelet with bell pepper, zucchini, and pesto. Yummy.

I laid low most of the day, I was exhausted from working.

For Lunch: Chicken and beans wrapped in a tortilla, with salsa.

We met up with the parents tonight for Jhanjay Thai, it had been a long time. Jenna came with us and the food was fabulous as always.


For Dinner: It was called Buddha's Basket. I wanted to try something different and it was fantastic!!! Stir-fried diced vegetables with chewy tofu, taro, cashew nuts, shitake and enoki mushrooms. Served inside a crispy basket.


We hung out and chatted at the condo and then called it a night!

Day 345

I went to work and it was pretty busy. Jenna and Cassi came in and ate and then we went to see Inception. It was a really intense movie, it was amazing but you really ad to stay focused to make sure you got the story. I had  bit of popcorn, I missed dinner and I was really hungry. After the movie we went home and went straight to bed.

Day 345

For Breakfast: Just coffee.

We went to the market this morning and got some really great things. The eggplant was phenomenal looking, so I got some and I am excited to see what I come up with for it.

When we got home I made some more pesto, vegan of course, so I could have it in the fridge for future dishes. Then I made Cassi and I a lunch platter just for fun.

For Lunch: We had grilled baguette slices with heirloom tomatoes and basil with extra virgin olive oil, salt, pepper, and a dash of dried oregano. Along side that I made an olive tapenade. It was my first time making this and I was impressed with how it turned out. I just took some kalamata olives, some green olives, a couple of artichoke hearts, roasted garlic I made some black pepper and that was about it. Next to that I roasted some garlic cloves. And finally I grilled some tofu until it was crispy and seasoned them with a dry Italian herb blend. It was really good, very healthy and looked fantastic.


It was really good!

Cassi took off for her soccer game and I am hope getting ready for work. I hope it is not too busy like last night, I am feeling a little lazy.

Day 344

Before we went to work I made Cassi and I lunch.

For Lunch: Stuffed peppers with whole wheat cous cous, onion, natural chicken basil sausage, portobello mushrooms, eggplant, garlic, and pesto stuffed in a red bell pepper. It was my first time doing anything like this and I have to say, it was very good!

I also had some tri-colored carrots that I got from the market.
Work wasn't too busy tonight, but I made decent money. Towards the end of my shift I had to serve the Corporate people from our company, so I had to be on my best behavior!

Cassi and I went out for a drink with Ainslie, except I didn't have a drink.

For Dinner: I had a small caesar salad with no cheese.

Day 344

I made Cassi Banana and Carmel French toast this morning. It looked really good and she certainly enjoyed it.

For Breakfast: I made myself a pesto egg soufflé with eggplant and fresh tomato atop a piece of grilled wheat toast. I drizzled with olive oil and used some fleur de sel and fresh ground pepper. It was quite fantastic, if I must say so.

Cassi is in the middle of finishing up her Goal statement she is writing for her application to UCSF school of Nursing. It has been a very loooonnnnggggg process and I will be so excited for her when she finally sends that baby off!

Day 344

I woke up this morning and am feeling antsy. i don't work until 6 tonight and I feel like I need to go do something active. I am going to have some coffee make Cassi some French Toast and think about what I can do that won't hurt my knee. Hmmm....

Day 343

For Breakfast: Peanut butter and banana sandwich. Coffee.

Later when Cassi got home I made pizza on the grill with my new pizza stone Ally and Shay got me for graduation. First I made some vegan pesto with roasted garlic. I roasted he garlic first and let it cool down a bit, and I ground some almonds, until it was a fine grind. Then I put all my basil in the food processor and re-added my almonds, my garlic and salt and pepper, and finally added my Extra Virgin Olive Oil.

For Lunch: Whole wheat pizza dough with eggplant mushrooms and chicken basil sausage from trader joes with my pesto. I laid my pizza stone right on the grill and let it get nice and hot. I ran out of flour so I had a hard time working with my dough. So I basically had to stretch out the dough in my hands and flop it right down on the hot stone and then quickly put the toppings on. (almost like how a crepe is made.) It was really good and the pizza stone was awesome.



I had to go get my food handler's permit renewed this afternoon. It is an important class, but it is SO boring. I almost fell asleep 2 or 3 times.

Later tonight I met up with Jenna. I went over to her apartment and we chatted with her roommates and some of there friends. It was nice getting to know them. We grabbed a bite to eat after Cassi got off work.

For Dinner: Seared Ahi with wasabi and soy and a cucumber, ginger salad. Yum, yum.

Day 343

So last night as I was preparing dinner Tim and Kyle stopped by. We chatted and they cracked e up with there stories. They are quite the pair. I was just hanging out waiting for Cassi to get off work.

For Dinner: Shitake mushrooms and shrimp sauteed with Sugar snap peas, with fresh garlic and ginger. It was so good. I drizzled a bit of hoisin sauce on and enjoyed. For Dessert, an apple.

Cassi got home from work I made her the same dinner and then we went to bed.

6:00 came way too soon this morning. I felt like a zombie walking in to therapy this morning. I did a whole bunch of exercises that I haven't done in a while and I was getting pretty worn out, not to mention how exhausted I was. My knee is swollen from working so much and I should be doing more therapy at home, but I really have been working a lot and doing other things.

I am home now from therapy and I am truly exhausted. I might work Cassi's shift tonight, I could use the money, but so could she, and I work Fri and Sat night, we will see.

I took a picture last night of the beautiful carrots I got at the farmer's market! Aren't they fantastic, and see the two that are twisted together?

Day 342

Jenna ended up spending the night after our dinner, we drank a bit of wine and figured we should not drive. I woke up this morning and made coffee and breakfast.

For Breakfast: I used leftover tofu and veggies off the grill from last night and made a sweet potato hash. It was really good. I also had a piece of dry wheat toast along side.

I got ready and went to work. I worked and was home by late afternoon. I came home and made myself lunch and put my knee up, it is pretty sore.

For Lunch: Zucchini spaghetti with marinara, garlic, and fresh basil. I also had a piece of fresh mango.

Cassi is at work and I am absolutely exhausted. I finally have a physical therapy appointment tomorrow morning, I am a little nervous for it because I haven't been able to get in since I have cleared for work. I have been working a lot so I hope everything looks good.

Day 341

I had the day off today. It was real nice.

For Breakfast: Coffee. Granola and nonfat plain yogurt.

Jenna and I met up and we went out for lunch.

For Lunch: I had a BLT.

We did some shopping and she ended up getting herself a computer. We had a great time. After the shopping we decided to walk downtown from my apartment. We walked all the way down to the waterfront and went to visit Tim, who was bar tending at Fisherman's. We had a drink and chatted with him and Cassi came down and met us when we were off work.

The three off us came back to our apartment and I made dinner.

For Dinner: Whole wheat cous cous. Heirloom tomato salad with red onion, kalamata olives, fresh basil and olive oil and red wine vinegar. and we had grilled tofu and veggies (eggplant, onion, bell pepper, and mushrooms) It was really good. And for dessert, we had fresh mango.

I worked all day today. 10 1/2 hours. I made decent money but was completely exhausted.

Day 339

For Breakfast: Americano and a bowl of fruit from Louisas.

Cassi had a soccer game this morning and she did fantastic. After the game we went grocery shopping!

For Lunch: I made a pomodoro salad with heirloom tomatoes, red onion, olives, and basil. and had a bit more zucchini and marinara.

I worked tonight and came home and had some soup that I made earlier in the day.

For Dinner: Vegan minestrone with sweet potatoes and mushrooms.

Day 338

Woke up this morning and went to the market. We got some zucchini and beautiful purple and orange carrots.

For Lunch: Zucchini spaghetti. I sliced zucchini into spaghetti strands and ate with marinara.

I went to work tonight. It was a pretty busy night. After work Cassi and I went to Six arms and grabbed a beer and salad.

For Dinner: Mediterranean salad with chicken and a summer ale.

Day 337

We headed back from Arlington and Mom and Dad dropped me off at my apartment.

We hung out all day and got ready for work. It was a Crazy night at work. Jenna and Krista came in with the friends that helped move Jenna's stuff out here. Also our co-worker and good friend Lisa got really sick while she was serving and had to go to the hospital. She is okay but has really bad stomach problems. After all the craziness was done at work. Cassi and I headed home . . . . but wait.  We lost the keys. Cassi had them when we got to work and they weren't in the bag when we left. We spent almost two hours searching for them and had to get let in to our apartment.

It was a huge fiasco.

Day 336

Woke up early this morning and got picked up by Christina and we drove up to catch the ferry to Orcas Island.

For Breakfast: Americano and a low-fat raspberry muffin.

We went up to look at some wedding venues. She recently got engaged and is planning her wedding for next summer. The ferry and San Juan islands are so pretty and  unlike any other area. I long the Northwest! We were on a tight schedule so we literally didn't have time to stop for food at all during our adventure.

Christina dropped me off in Arlington and the car was waiting for me there. We had Krista and Jenna over for dinner at my parents house.

For Dinner: Brown rice medley with black beans. BBQ chicken tenderloins, and grilled veggies. (Zucchini, onion, broccoli, carrots, grreen beans, and bell peppers and portobello muchrooms.

For Dessert: Raspberry, Mango, and lemon sorbet with blueberries and rum!

Day 335

For Breakfast: Coffee. Blueberry muffin.

I went to work today and did pretty well. I was in the back section of the restaurant and half way through the shift I was feeling a bit worn out. The knee is still getting used to maneuvering around a busy restaurant. Jenna and Krista were downtown all day and went to the market. Jenna and I are trying hard to convince Krista to move out here too and I think she was more tempted when she saw all the great and beautiful things at the market!

After work I met them and we went down the Fisherman's where Tim and Josh work. I ate lunch and introduced Tim and Josh to our cousins!

For Lunch: Roasted garlic plate with bell peppers, caramelized onions, and olives with garlic, (obviously) and crostinis. Just a small snack while we sat out on the patio.

Now I am home and doing some work. Cassi is at work, as usual, and I am getting things in order. Tomorrow I am going to go up with Christina and look at a wedding venue with her. I am real excited, it should be a fun day.

I am going to go see what I can come up with for dinner. It is a beautiful night here in Seattle and I just love it here.

Day 334

For Breakfast: Just coffee.

I picked my cousins up from the airport today. Jenna is moving her to go to school. Her sister Krista came out with her to visit and help her get settled in. I picked them up and we went to Jenna's new place. She is moving into a room in a three bedroom apartment and she has two roommates. It was overwhelming I think but it will be good! It's a long way from Pennsylvania.

For Lunch: Spinach salad with balsamic vinaigrette, sweet onion and strawberries.

We walked down to the P-Patch and relaxed a bit at our apartment and then went out for dinner. We had margarita while we were waiting for Cassi to get off work and some chips and salsa.

For Dinner: Shrimp Fajitas with black beans, pico de gallo, guacamole. All the good stuff.

Then home and to bed! We were all tired!

Day 333

Today was my first day back at work. It went pretty well. By the end of my shift I was pretty tired and my leg hurt only because my brace rubs and it starts to hurt.

For Breakfast: I had a toasted bagel. Bad I know! Coffee.

For Lunch: After my shift I ordered Steamed broccoli and drizzled some spicy sauce over it. It was great.

A good thing about being back at work is how much water I drink while I am there. The bad thing is the overwhelming amount of carbs I am surrounded by. It is pretty rough! No temptations though!

Cassi and I ended up going over to Claudia's for dinner.

For Dinner: Grilled chicken and corn on the cob.

Day 332 Triathlon Day and Wedding!

Woke up real early, and started getting ready for the Triathlon. I made Cassi breakfast.

For Breakfast: Berry Banana smoothie with whey protein and cranberry juice. I made Cassi the same but she also had a big bagel.

We got to the park and it was already warm and sunny. Mom and Cassi got ready for the swim and Dad and I took our positions as spectators. It was awesome! Cassi and mom got out in front in the swim and didn't have to deal with all the people so much. We watched them go from swim to bike and from bike to run and then we were there for them to cross the finish line! They had unbelievable times!

Mom: 1:57:40 and Cassi 1:32:32

I can't wait for next year so I can do it!

Danskin Triathlon

After they finished I had to get home and get straight up to the wedding. I set up, I sang, I celebrated. Everything went really well and the music was perfect. Phew.

The wedding was really fun, I think a lot of people were weary of the heat, it was 95 or so. But I didn't mind!

For Dinner: I had a little taste of almost everything Grilled veggies, mashed potatoes, salmon, chicken with a pesto sauce, and some kind of beef dish, just a nibble. I also had a great salad with candied pecans and mixed greens. Everything was really good! I drank a beer while I was there, and the just water. I also had a taste of champagne for the toast. We went back to my parents house and called it a night. Here are some pictures that Shay took.

Day 331

We woke up on Saturday and went shopping early for a dress for Cassi. We started the day out getting coffee and breakfast.

For Breakfast: Americano and a carrot bran muffin.

We had a lot of luck shopping and came home just in time for Cassi and I to get picked up by mom and go down to Seattle Center and get all prepped for the Triathlon tomorrow. It was insane down there. So many people! Cassi and mom got all registered and I of course, just tagged along. After the chaos we decided to get some food and the girls wanted some carbs for the big day. We went to Il Fornaio so they could get pasta.

For Lunch: Grilled salmon with a piccata sauce, steamed broccoli, and a tuscan salad with Arugula, onion, white beans, tomato and red wine vinaigrette.

Cassi and I came home and I practiced some more on the guitar for the wedding tomorrow. We finished the day running a couple of errands, getting Gelato with mom over in Ballard and coming home to get some sleep. I had a small serving of peach and mango sorbet and coconut gelato.

Day 330

Well, my guitar is at the shop as I type. I hope they can fix it by tomorrow. I still need to practice so it's a good thing there are five other guitars in my apartment do diddle on while ole' reliable is in the shop. The guy asked how long ago I bought the guitar and his eyebrows went up when I said eight years ago.  I don't know why, but he thought that was long long ago. Who knows.

I transplanted my swiss chard to another pot today and I'm worried I killed it, they are looking not so perky. I hope they come back from the dramatic ordeal.

For Lunch: A salad made of fresh tomatoes from the balcony, and fresh basil, with kalamata olives, oregano, salt, pepper, red wine vinegar and extra virgin olive oil. Yum.

Day 330

Holy cow, 330 days. Today is a very important day. The wedding just two days away and I really have to finalize my set list for the pre-ceremony music. I have to take my guitar in and see if there is anything to be done about that. I need to clean up and make sure I have everything I need and make sure Cassi has everything she needs for the triathlon and make sure things are pack for the transition from triathlon spectator to wedding singer. Tomorrow will be devoted to pre triathlon info sessions and gear checks.

For Breakfast: So far just coffee. I will have some cereal in a bit.

My arms are sore from swimming, and I absolutely love the feeling! I am going to go take my guitar in! ¡Adios amigos!

Day 329

Woke up in Arlington this morning.

For Breakfast: Coffee. A bowl of LIFE cereal.

I laid out in the sun for a little bit but then got ready to Cory's Wedding Rehearsal. I checked my amp and cords one more time before I left for rehearsal and all of the sudden my mic didn't work at all! Cassi and I got ready quickly and drove to Bigfoot Music. I haven't been there in years but it is where I purchased all of my equipment long long ago.  They totally saved me and fixed it all up for me! We went to rehearsal but first to lunch they were having. The lunch was catered by a company that does fresh pizza with a big wood burning pizza oven that is portable. I thought it was a fantastic idea! The pizza was really really good.

For Lunch: A couple sliced of thin margherita pizza and a limonata to drink. They also had dessert pizza, one was cinnamon apple and the other was vanilla custard with fresh fruit. what a fun party idea!

The rehearsal went really well and I think the music is going to work out perfectly. My guitar had a short in the connection though, I am worried about that. I will get it looked at in Seattle tomorrow. I sure hope it's a quick fix.

Cassi and I scurried down to Seattle and picked mom up to go swimming one ore time in the lake before Sunday's triathlon. They each did 3/4 mile and I did a 1/4 mile, arms only. It felt really good!

We went back to Columbia City Ale house and ate dinner. It was really good, but not as excellent as the last time we went.

For Dinner: Grilled Salmon with molasses glaze atop mixed greens and fire roasted peppers and onion in a black mustard dressing. Just water.

Shower and straight to bed!

Day 328

I woke up nice and early and went to my 6 week post op appt. Dr. Larson said things are looking fantastic and I can tell that my strength is coming back quickly. I have been cleared to do longer sessions of stationary bike and now I can do the elliptical trainer.

For Breakfast: Coffee. One egg, over hard.

I went to the condo to use the exercise room and did a big workout. I even did a weight circuit and it felt really good. Then I came home and made myself lunch and walked down to the Park to catch some rays.

For Lunch: Peanut butter and jelly on wheat.

I got pretty sunburnt and I am really excited about it!

Mom called me up and I decided to go swimming with her. Dr. Larson said I could go swimming as long as I didn't use my legs. So that's what I did and it was definitely a workout. I did a quarter mile in the lake and mom did 3/4 mile. She is so ready for the triathlon!

She dropped me off and I made myself dinner, got ready to go up to Arlington and waited for Cassi to get home from work.

For Dinner: A sweat potato hash with onions, bell peppers, garlic and shredded sweat potato, topped with two eggs, over medium. It was really good!

We headed up to Arlington and went straight to bed!

Day 327

I drove Cassi to volunteering this morning. After tomorrow she will have over 200 hours of volunteering and she is so excited! The nurses say she's the best volunteer they have ever had. I believe it! She's kind of a big deal, ya know?

For Breakfast: Just coffee so far but I am going to have a bowl of cheerios.

I am going to try and record and memorize all the music for the wedding today. I have a lot of work to do. Of course I need to clean up the apartment beforehand so I don't have any distractions. The other thing I have been thinking about is giving myself some rules to get back on track with my weight loss. I find myself getting off the wagon when I am hanging out with family, or having to do a bunch of social stuff. From this moment on, NO MORE ALCOHOL, at least for the time being and NO MORE FRIED FOOD. I don't usually order fried food but I will snag a fry from Cassi's plate or have some greasy chips, and that is not going to help me! I need to go back to basics and think about when i was doing when I first started last September. It's August and I want to be on track come the 1 year anniversary of the blog!

Weekend Update: Days 324 & 325

Mom and I went to Snohomish today ans walked around the cute shops.

For Breakfast: A smoothie that my mom makes, it has berries, protein, Emergen-C and flax.

For Lunch: We stopped in at a bar and grill we both had a grilled salmon Caesar and coffee.

We went to get pedicures and then home to hang out. I had to test all of my music equipment for the wedding next weekend.

For Dinner: I had half a sandwich with pepper turkey breast and some sweet hot mustard on grilled wheat bread.  We went to a party on the water where Kyle was playing. I had a beer there but stayed pretty tame because I drove back to Seattle.

I woke up with late with Cassi and she made me breakfast!

For Breakfast: Coffee. Mushroom pepper and zucchini omelet.

We laid low and ended up going to a movie. We saw Salt, purely because Nana said it was good and she is the only movie critique I listen too. It was fun to just chill out with Cassi. Before the movie we grabbed a beer at a new English pub place in Ballard we shared fries, ugh.

After the movie we met up with Mom, Dad, and Tim and went back to the pub and had dinner.

For Dinner: Caesar salad with grilled chicken.

Day 326

For Breakfast: Coffee and two eggs and a piece of toast.

I laid low the first part of the day.

For Lunch: Chicken and bean burrito.  A bad choice.

I went to the condo tonight and used the stationary bike. It felt great I did 30 minutes and my knee felt great. It was SO refreshing to sweat, to get my heart going. It has been so long since I have been able to get a workout in.  I cling to the thought of being cleared to swim or do the elliptical. I need to remember that I lost my first twenty pounds not being able to run, Once I get cleared to do some of these things I will be ready to go all out.

For Dinnner: Whole Wheat cous cous with onions, zucchini, mushrooms and tofu. Let's be honest, it was not very good. I had a scoop of non-fat frozen yogurt too.

Day 323 (Friday)

I headed up to Arlington today and spent the entire day up there making a birthday dinner for Tim. He asked for Mahi Mahi tacos and that's what I made him!

The menu, consisted of grilled Mahi Mahi (simple salt and pepper) with small white corn tortillas, I made homemade pico de gallo, homemade salsa from Cory's grandma's recipe. Homemade guacamole, An awesome cabbage and jalapeno slaw with lime and cilantro. It was really good if I do say so myself. Everyone was was satisfied!

After dinner I went to the Conway tavern with Tim and Kyle. I didn't have anything to drink but I did sing a couple of Karaoke songs. It was a good night.

Day 322

For Breakfast: Coffee and Peanut Butter and Jelly toast. Coffee.

For Lunch: Turkey burger from last  night's dinner.

After Cassi came home from volunteering we walked down to a park that is right next to the community garden. We sat out on a blanket and got sun. We came home and before I knew it Cassi had to get ready for work.

I completely cleaned out the cupboards in my kitchen and rearranged everything. Pretty exciting stuff.

I went to the lake with mom and watched her swim, she did great.

For Dinner: Mixed vegetables with tofu in a ginger sauce with brown rice, we got thai after the lake!

Day 321

Well, I didn't post last night to tell you what I was up to. Let me update you real quick . . .

I went shopping with mom and I got a dress. I know it sounds crazy but it's black. I am going to spice it up with some colorful shoes, but it's sooooo flattering and really comfortable. I need something I can play guitar in and sit comfortably in, so this is the dress. I got home kinda late, around 9. I made dinner and waiting for a long time for Cassi to get home. After I had waited for ever, I decided to eat.

For Dinner: Homemade turkey burgers with caramelized onions, and whole wheat buns. I also made homemade sweet potato fries. It was very good.

Just as I finished eating I got a call from Cassi. She was very upset and told me her car had been towed. There was construction on the street that she parked on, but the "NO PARKING" signed had been removed, regardless the officer there overseeing the construction told her every car had been towed. Cassi got really upset and the cop laughed it off and told her to walk to the tow place. Poor Cassi, after a 13 hour volunteer/work day starting walking down the streets of Seattle at 10:30 at night, only to realize after walking a mile, the towing place he sent her had been shut down months ago. What a jerkimer! Thank god my mom was staying at the condo, she came and picked Cassi up from the street and took us to the correct towing company. Over 200 dollars later we drove home and I made Cassi dinner. We went straight to bed, but dang, what a night! We will be fighting this one, and hopefully will be able to rectify the situation, because we definitely don't have 200 dollars to throw around.

Day 321

I woke up today and took Cassi to volunteering really early. I came home and got ready and ate breakfast.

For Breakfast: Two eggs, over hard and a piece of 10 grain bread, toasted. Coffee.

I went to Physical Therapy and got a good workout in. I am able to do some pretty strenuous muscle building activities, I know it sounds weird but it felt to sweat. :) When I left Physical Therapy I ran over to a store to shop around a bit for a dress for Cory's wedding. I had some great luck and have some dresses on hold so I can go back and take a look later today with my mom. I came home from the store and made myself some lunch.

For Lunch: Caesar salad with crisp romaine, those homemade croutons from last night and a homemade vegan caesar dressing. I googled vegan caesar dressing and made the recipe that I had the most ingredients for. The dressing was made with ground almonds, soy sauce, garlic, lemon juice, and olive oil. It also called for nutritional yeast flakes, I don't know what that is and I definitely didn't have any so I left that part out. I was really impressed with the dressing and I recommend it, it tastes like caesar dressing, for real! (much healthier though) Atop my salad I had some tuna fish that I mixed with a couple of capers, and some green onion with lemon juice and olive oil. The salad was really fantastic. I ended my meal with a crisp apple.


I have been working on the wedding music for the last couple hours and Cassi just came home, only to change for work and she is already out the door again. I am going to go be Mom's sidekick and watch her swim in the lake. She is really being good about training! I hope I find a dress tonight, it's getting down to the wire!

Day 320

I woke up early and found something unusual in my bed! Cassi. Usually by the time I wake up she is long gone at volunteering, but I woke up and there she was. She twisted her ankle in the soccer game on Sunday and it blew up last night, she decided to stay off it for a day.

For Breakfast: I woke up and let her sleep in but I made coffee and made myself two eggs. 


When Cassi woke I made her fresh French Toast with homemade Blueberry compote! It looked really good and she loved it! I cooked down some blueberries I had and added a little bit of sugar and pure maple syrup and some cinnamon and clove. (just a touch) Of course i sprinkled it with powdered sugar for that special touch!

I did laundry today and we paid lots of bills and I went through all of our hanging clothes and started a Goodwill pile. It was a decently productive day and since Cassi stayed home it was nice to have some chill time too. I have been so glad that I found my camera that I have been taking a lot of pictures. Here are a few of the balcony garden.

This evening I cooked a big meal for the two of us. Whiel we were eating Cassi and I figured out that our meal had 11 different vegetables in it! That's pretty awesome. This is what was for dinner . . . 

For Dinner: Grilled chicken breast marinated in a dijon, and lemon zest dressing I made. Grilled corn on the cob with a lime chili butter, and grilled veggies; mushrooms, bell pepper, zucchini and sweet onion. I also made a nice salad. It had fresh romaine lettuce, radishes, carrots, celery, and green onion with toasty pecan pieces and homemade whole wheat croutons made from a some leftover sfilatino bread. The salad also had fresh golden cherry tomatoes from our garden. It was a great feast.

We just got back from a walk around our neighborhood. We sat by the water and watched all the sailboats go by. Now we are home and just laying low. Goodnight!

Day 319

For Breakfast: Coffee. Two eggs and a piece of wheat toast.

I got up early to walk to Physical Therapy this morning. It was a good idea because I was exhausted but really warmed up when I got there. Cassi was at Volunteering so I gabbed the car from her and came home. Cassi and I made lunch together.

For lunch: I had some leftover jicama slaw, so I added cucumber to it and dressed it up with some more lime and rice vinegar. Cassi grilled some tofu while I made a sauce. The sauce was made of grated ginger and garlic, lime zest, lime juice, cayenne, sesame seeds, and soy sauce, rice vinegar and some brown sugar. I also added some finely chopped green onion. I heated the sauce just enough to fully dissolve the sugar and left it meld together a bit and then I chilled it before I splashed it on top of the meal. It was really good!


I was so tired and so Cassi and I laid low for a bit and then Cassi went to work. I just finished making homemade pizza dough and just ate dinner, yum!

For Dinner: Pizza with red sauce, eggplant, zucchini, mushrooms and some of that basil chicken sausage. No cheese of course!

I have a feeling it's going to be another early night I am feeling really beat after a long day of cooking and walking. I am really starting to feel more like myself again and now I really need to focus on getting a job, putting the music together for Cory's wedding and getting myself back in fightin' shape.


Weekend Update: Days 317 & 318

I spent the day on Saturday up with Cassi and Mom. They trained for the triathlon. A combination of having cramps, pitying myself for not being able to run, and boredom made me pretty cranky. But I cheered up and when we got home I got to work on making homemade pizza for an appetizer to bring to a party that night. We all went to the Huleatt's annual summer party and it was a blast. I saw people there that I haven't seen in years! Everyone was so nice to Cassi and excited to meet her. I think for a lot of people, especially up in Arlington, meeting Cassi is a big deal. Most of my friends make a point to take an interest in Cassi and me, to show that they are okay with it, despite what other conservative opinions they might have. When I first came out I was scared to face people in Small Town Arlington, now I would show up anywhere hand in hand with Cassi and all my friends admire my openness and accept it. They new me as "Katy" long before they new me as "the weird lesbian" in the room. It was really good to see everyone at the party and we all had a blast. I was the designated driver and drove Mom, Dad, Cassi, Jodi, and Greg home, what a wild bunch.

Sunday morning we woke up and slowly got ready to head to Cassi's soccer game back in Seattle.

For Breakfast: Coffee and one egg.

For Lunch/Dinner: BBQ chicken on the grill, grilled sweet corn on the cob and a jicama apple slaw. I used ginger, apple, jicama, carrot, green onion, lime zest and juice, garlic, cayenne and rice vinegar. It was awesome!

For Dessert: We had mango and blueberries and much later in the evening i had frozen pineapple chunks.
We had a pretty early night and I am feeling good. Back on my game and ready to lose weight again! I still have another 20 to lose and it is officially time to get on it!
