Herb Garden!

Day 228

For Breakfast: Coffee.

For Lunch: a Shrimp Taco salad with lettuce, pico de gallo, avocado dressing, sauteed shrimp with onions and peppers and some guacamole. So good!

I went to BioSonics today to give mom her glasses, she left them at a restaurant near our apartment and I grabbed them for her. After I came home I worked for a few hours on my thesis. By this time I had to get ready for work and pick up Cassi from Volunteering.

I worked for a couple hours and then got cut because it was so slow. I could use the cash but there was really nothing going on there.

Now I am home and Cassi and I have the rest of the night to relax, sounds good!

Day 227

For Breakfast: Two eggs. Coffee.

For Lunch: I went to Louisa's and had their great spinach salad with crispy prosciutto, artichoke hearts and white beans in a light pesto vinaigrette. I also had a bran carrot and apple muffin that was awesome!

I worked on my homework and when Cassi got home from work we went over to see the cousins and Aunt Andy and Brooks. We played all night and by the time we got home we were both ready for bed.

For Dinner: a bowl of Raisin Bran Crunch with Rice Milk.

Wednesday, April 28, 2010

Day 226

For Breakfast: 1/3 cup of High Fiber O's

I went to the gym today and it felt awesome. I really want to lose some more weight, I still have 20 lbs to lose until I get my BMI into the "normal range". I know the body mass index is pretty ridiculous but as far as i have come i still have quite a ways to go. I ran two miles at the gym and then did about 20-25 minutes of swimming.

For Mid-morning snack: Bran Muffin, Non-fat blueberry yogurt. Americano.

I stayed on campus all day and worked on my thesis. It felt really good to go to the gym and I have felt productive all day. I didn't get a chance to eat much so when I got home I was really hungry. I had some tortilla chips but kept working on my thesis. I have it narrowed down to 116 different entries, now I have to  edit, and re-edit and re-edit!

For Dinner: Grilled Chicken breast with some of my fresh thyme, oregano, and Italian parsley from my herb garden, which is looking fantastic! And steamed broccoli and with Mushrooms.

Tuesday, April 27, 2010

Day 225

For Breakfast: Coffee, and oatmeal.

I am having so much fun with my fitbit. It is a small little device I wear on my torso. I wear in my bra and it's so tiny you cant see it at all. It tracks the steps I take, the distance I go, the calories I burn and the level of activity. It also tracks my sleeping habits, it tells me when I go to sleep, how long I sleep, how many times I wake up during the night and my total sleep efficiency. It uploads all my information automatically when I walk past my computer! I love it!

Midmorning snack: Animal Crackers and an orange. Americano.

When I got home from school Cassi was making me lunch!

For Lunch: Grilled chicken breast with brown rice medley and a peanut sauce! Thanks Cassi!

Later today I went and met up with my thesis advisor Christina, we went over the project and set out some goals for me. Then I met up with my mom for a bit, she was working late.

For Dinner: A salad with romaine, mandarin oranges, bell pepper, and red cabbage with a sesame ginger dressing and little wonton crisps. I also had some shrimp and avocado brown rice sushi with low sodium soy sauce and pickled ginger. (we stopped by QFC on our way home because we are running low on groceries)

Monday, April 26, 2010

Day 224

Woke up early and finished packing. Cassi and I met a couple of the girls in the lobby and we all went to the airport together. We got through security with a enough time to grab some coffee and breakfast before we got on our plane.

For Breakfast: Bran muffin and an Americano.

On our layover in Portland we stopped for some lunch.

For Lunch: Cobb salad with no cheese and a balsamic dressing, and a cup of chicken and couscous soup.

I just got home and two great things came in the mail, my fitbit, and my training tee for the Danskin Triathlon my mom and I are doing. I have some major homework to do but I definitely am going to take some time and figure out my fitbit!

My teammates took some really great pictures of the tournament and I will post them on my blog as soon as they get them to me!

For Dinner: Two eggs and a peanut butter luna Bar.

Sunday, April 25, 2010

Day 223

For Breakfast: Luna bar and coffee.

We tied our last game of the tournament and we finished really strong. I really played hard today and put everything out on the field. I made it through all four games and now I get to have a day of vacation! After the game we rushed back to the hotel and got our suits on and went to the pool, which was very classy. I was so impressed with the pool and the poolside service Cassi and I ordered lunch there and the food was great.

For Lunch: Iced Tea and we split a BLT sandwich and a Chicken Caesar salad.
(I can't believe I am putting these pictures up, I have come such a long way!)

If you know me then you know that I often abuse my relationship with the sun. I love laying out (something I have been too shy to do until recently) and I hate wearing sunscreen. AKA, I am stupid. I think it goes without saying, I got really sunburned!

After a few hours Cassi and I decided to take a walk. Our team thought it would be fun if we could go to a show together tonight. Cassi and I volunteered to go check out what we could get tickets to. We ended up going to the Mystere, it’s a cirque di Solei show and it was really great!

Before the show our team just grabbed something quick and inexpensive.

For Dinner: Two tiny chicken tacos with chicken breast and pico de gallo and some chips and guacamole.

We went to bed right after the show, most of us were so tired from getting whaled on in the tournament, bed sounded so good.

Oh, by the way, Happy Birthday Nana, Love you!

Day 222 (Saturday)

I woke up really early this morning because I was so nervous to play soccer. I was feeling really anxious. It was not about winning or losing I think it was just so much for me to take in. Here I am, back where it happened. Last year I didn’t even make it through the first half of the first game. When I woke up this morning all I could think about was getting through that first half. But I know that I am ready and SO much healthier than I was a year ago. Making it though the weekend will be a great feeling and so rewarding considering how far I have come.

For Breakfast: Coffee. I sliced some apple for Cassi and our two roommates (Deirdre and Katharine) And a Luna bar.

Our first game was at eleven and when we arrived at the playing fields we were already weary of the heat. It was a scorcher, maybe not for the locals but for us Seattle girls anything above 70 makes for a tough game!

We started out really well! The division that the team was placed into is really good. We knew that we should probably be in a lower division but the spots filled up so quickly. Within the first five minutes of the game Deirdre, our center-mid and our hotel roommate, got slammed in the face by the other team and broke her nose. There was blood everywhere, what a way to start. As unlucky as that was, the rest of us made it through the game in one piece. We lost 2-1 but we played well. When the end-of-game whistle blew I felt all my anxiousness melt away, I knew I was going to be okay through the tournament, regardless of the score board. My knee felt great, not even sore and I was feeling in-shape, aggressive and quick!
The other two teams we played today were incredible, we just couldn’t hang, but we definitely worked out butts off. We went back to the hotel feeling tired and proud of our selves for making it through the day. I am the youngest player on our team and almost every single person we played against was a few years younger than me, I didn’t feel too bad when I realized many of the players on my team could be the mothers of our opponents.

Our team had pre-ordered boxed lunches for today, which ended up being an awesome idea. Our team manager is so organized.

For Lunch: Salad of romaine with grilled chicken breast, almonds and sesame seeds, wonton strips and a sweet Asian vinaigrette. It was really good and exactly what I needed, we had ourselves quite the picnic sitting in the grass by the fields.

We got back to the hotel and all had to shuffle through the shower to get ready for our dinner reservations. The four of us girls in the rooms popped open a bottle of champagne while we were getting ready. Cassi and I set up a table for us at one of the Il Fornaio restaurants at the Venetian Hotel. Dinner was fantastic and they really took care of us. It was fun for all of us, as sunburned, bruised and sore as were to dress up and enjoy a fancy dinner.

For Dinner: Grilliata Pesce e Polenta. I had a grill medley of scallops, prawns, salmon, and white fish, with broccolini, and a piece of firm grilled polenta. It was very nice and I didn’t feel like I was cheating on my “diet”. Cassi and I also shared a salad with grilled pear, grapes, field greens, radicchio, and toasted pecans with a pomegranate vinaigrette. We also shared some nice red wine!

Then home and to bed. I was exhausted.

Friday, April 23, 2010

Day 221 (Friday)

I woke up well before the alarm went off. I was too excited to sleep! I made some coffee and double-checked our pack job.

For Breakfast: Coffee. Oatmeal.

Cassi and I caught the bus to the link rail to the airport. I was worried about leaving my freshly planted herb garden; I hope everything will be healthy when we return.

We had a layover in LA and stopped and grabbed something to eat there.

For Lunch: Chicken taco salad with romaine, grilled chicken breast, pico de gallo, guacamole and salsa.

Cassi and I got into Vegas around six and were the first couple people to the Hotel. We checked into out room, which was absolutely fantastic. Our entire team stayed at the new Trump Hotel. It is really fancy and one of the best things about it is that it doesn’t have a casino in it and the entire property is smoke free!

After a bit the rest of our team showed up and we set out to find something to eat. Finding something to eat in Vegas is hard. Not because there is nowhere to go but because there are SO many places to go that I’ts almost impossible to make a decision.

We ended up eating at a burger joint just around the corner from our hotel.

For Dinner: A small green salad with a house vinaigrette and a house made veggie burger complete with lettuce, tomato, onion and pickles. It was pretty good! I had a few of Cassi’s sweet potato fries, which were fantastic.

After dinner the majority of us went to bed. Big day of soccer tomorrow we had to be prepared.

Thursday, April 22, 2010

Day 220

For Breakfast: Coffee. Blueberry Bran Muffin.

After class I came home and finished up packing for Vegas. I am really excited. I ironed some clothes and got everything in order at home. This evening Mom and Dad came over and hung out. We went to dinner at Il Fornaio and visited Cassi.

For Dinner: Grilled Salmon and steamed broccoli.

Now I am home and really tired. I should probably do some homework before I leave, but at the moment I am feeling incredibly unmotivated! I will have to reach deep down and find a way.

Day 219

For Breakfast: Two Eggs. One piece of Toast.

For Lunch: Grilled Chicken Tenderloins and some sauteed mushrooms.

For Dinner: Bowl of Raisin Bran Crunch with Rice milk. Can't get away from that breakfast food.

I am packing for Vegas and checking everything twice. I am so excited to go and play soccer. Vegas isn't really my scene but I am excited to go and explore and hang out in the sun! It is supposed to be real warm while we're there. I have been trying to get real in shape for vegas but I was thinking about how active I will be while I'm there, I'll hopefully come home a few pounds lighter!

I was looking at pictures of myself from last year, not only do I look pretty miserable because of the knee injury, but I cannot believe how much heavier I look! It's amazing. I can't wait to take lots of pictures of this year!

This is a couple hours after the injury. I am sitting on the side lines watching my team play. Look at how chubby I look. And you can't tell from this picture but I am incredibly sun burnt too!

Tuesday, April 20, 2010

Day 218

For Breakfast: Coffee. Nonfat Blueberry yogurt.

Class was great today. We got into groups in our thesis class and talked about our projects. These are the same groups we will have for the rest of the quarter. My group is really good and I can tell we are going to help each other a lot.

For Mid Morning Snack: Blueberry bran muffin.

For Lunch: Tuna, capers, kalamata olives, artichoke hearts, lemon and extra virgin olive oil on a whole wheat baguette.

For Dinner: Smoothie of mixed berries, nonfat yogurt, protein powder and splash of almond milk.

We are really running low on groceries but we leave for vegas in a couple of days and don't want to make a big food run before we go. So as I look over what I have eaten the last few days, I see that almost all of my meals have been breakfast foods, whoops!

Monday, April 19, 2010

Day 217

For Lunch: Cup of Vegan bean and vegetable soup from work.

I worked all night and it was slow but because I took all the tables I made decent money. I am exhausted.

For Dinner: Salad with mixed greens, fennel, carrots, with a hard boiled egg and some shredded rotisserie chicken, with a house vinaigrette.

Day 217

For Breakfast: Two eggs, One piece of Toast. Americano on my way to class.

I am just about to go into work. It is my last scheduled shift before Las Vegas so I have got to make some cash. I can't believe we leave on Friday for the tournament. I feel really good. I should try to go to the gym a few times before I go. I feel much healthier than I was last time I went (knee injury aside) but it's still a huge physical feat to play five soccer games in 85 degree weather against people who are much better than you! It should be quite a workout!

Day 216

For Breakfast: Coffee. Some High Fiber O's on my way to the soccer game.

Cassi and I had a game today at 11:15. It was so nice outside, I even got a suntan! Both of us played really well. It was one of the better games our team has played, but we just can't seem to score when we need to. Cassi had goal but we lost 2-1.

For Lunch: Roasted chicken with a side of broccoli and butternut squash.

Later in the evening we went over to the condo and hung out with mom and dad. We have such a tradition, and now the tradition includes going to our thai restaurant, Jhanjay Thai.

For Dinner: Tom Yum soup. Broccoli, cabbage, carrots, mushrooms, tofu, and ginger in a clear vegetarian hot/ sour broth. So good and really quite healthy!

Saturday, April 17, 2010

Day 215

For Breakfast: Coffee.

I went to the market today and was so impressed with all the plants. All organic all grown here! I immediately went to Lowes and got myself a large planter and some organic potting soil, then went back to the market and picked out my herbs for my herb garden. Chives, oregano, thyme, basil, and italian parsley. It was pretty simple to do, now I just need to make sure I don't kill them!!!

For Lunch: Two poached eggs with roasted bell peppers, spinach, a slice of ham and pesto on an English Muffin. with a cup of fresh fruit. (I went to 'breakfast' with a friend at 14 Carrot Cafe)

I went to work tonight, I didn't start until six. It was pretty busy, I made decent money. After work Cassi and I came home and went to bed. I had a bowl of cereal for dinner. I didn't have the energy to do much more.

For Dinner: Bowl of Raisin Bran with almond milk.

Day 214

For Breakfast: Two eggs. One piece of toast. Coffee.

I vacuumed the entire apartment today. What a thrill! I went to work at 4.

For Lunch:  I had some all natural organic popcorn. I was so hungry and its basically all we have.

For Dinner: Spinach salad with onion, mushroom, and salmon. So good.  (at work)

I am surprised how much this cold is hanging on. I still don't feel 100%. After work Cassi and I just came home and relaxed and eventually went to bed.

Thursday, April 15, 2010

Day 213

For Lunch: Zucchini and shitake mushroom frittata. Breakfast I know.

I just got back from walking Greenlake with my mom. Feeling good. It is so nice out today!

For Dinner: Caesar salad with Salmon. From work. I went to visit Cassi.

I went up to capitol hill tonight and met up with a few friends. Cassi and I had a beer at the end of the night. It was good but I felt awful the next morning!

Day 213

I woke up early to finish a bit of homework for my class at 12:30 today. Last night I got an email from Leika. She is the woman that I will be working with directly with Community Kitchens. She is going to call me today to discuss plans and what I want to be a part of. I spent the whole night cleaning and doing the dishes and laundry. When I woke up this morning I remembered how good it feels to wake up to a clean apartment. We are so busy that house work gets away from us sometimes. Before I know it I have clothes all over the bedroom floor and a stack of dishes in the kitchen.

For Breakfast: Coffee. Oatmeal.

Day 212 (Wednesday)

For Breakfast: Coffee.

Cassi and I went on a run today. We started around Lake union and when we got o Fremont we decided to walk to my parents work, only to find out that my mom stayed home sick and my dad was out on the boat doing a demonstration. We walked back via westlake. The round trip was probably around 8 miles. We we exhausted when we got home. It was so nice today that we had to get out of the house for a few hours.

For Lunch: Tuna Sandwich. Canned tuna fish. Artichoke hearts, kalamata olives, capers, salt, pepper, lemon and olive oil. on a baked wheat baguette. I love this sandwich and it definitely filled us up after our long run/walk.

Mom and I have registered for the Triathlon! We are committed to it and we are going to have to start training for it on a more regular basis. With the nice weather this shouldn't be to hard. Greenlake here we come!

We went to bed pretty early tonight.

Day 207

For Breakfast: Two eggs. One Piece of Toast.

I spent almost the entire day in bed. I am starting to feel better but I stayed home from work tonight to let myself rest. I should be feeling good enough to go to work tomorrow though. I feel bad that I didn't go to the gym at all this week. Only two weeks until Las Vegas and I still need to shed some pounds.

For Lunch: Whole wheat penne. I made Cassi some for lunch and had a small bowl for myself. It was simple just some olive oil, lemon, and salt and pepper.

For Dinner: A bowl of the 9 grain cereal with rice milk.

I got a call today from Kara-Lee. She is the woman I emailed last week about the intern position at Community Kitchens Northwest. I applied last week and told them a bit about myself. I am heading up to a local restaurant to meet up with my thesis advisor, to talk about my project. It's getting close to the time when I will have to compile my blog journey into a cohesive project. I am excited, but a little nervous, it's going to be a lot of work.

Friday, April 02, 2010

Day 200

200 days people! That's pretty insane! I feel really great. I weighed myself at the gym yesterday and I am at 31 official lbs.

For Breakfast: Mushroom, bell pepper, and zucchini scramble. Coffee.

Cassi volunteered today and I caught a ride with her down to the gym. I ran another 3 miles. I didn't think I was going to do it, because I got on the treadmill and felt really tired. I thought, 'maybe I'll jut do a mile' but  I buckled down and ran those three miles! I did a big weight work out and, again, I feel exhausted.

For Lunch: Romaine lettuce, hearts of palm, cannellini beans, slivered almonds and sauteed shitake mushrooms, tossed in a balsamic vinaigrette and topped with a grilled chicken breast. I also had a banana.

After a little while it was time to go into work. It was slow so I got cut, but after I got clocked out everybody got really busy, oh well.

For Dinner: Griddled octopus, potato, red onion, celery, with salt, pepper, parsely, lemon juice and extra virgin olive oil.

Thursday, April 01, 2010

Day 199

Just got home from school and the gym. I am absolutely exhausted. I did another three miles on the treadmill, this time I did it 2 minutes faster than yesterday. I also did a challenging weight circuit. I just finished eating my late lunch.

For Lunch: Vegetarian taco salad. I chopped up some extra firm tofu, mushrooms and garlic. Sauteed in a pan with a some olive oil. I added black beans, chili powder, cayenne, cumin, salt, and pepper, a dash of salsa and fresh lime juice. I put this mixture atop a bed of fresh romaine. Yum, yum.

For Dinner: All Natural Smoked chicken and turkey Basil sausage diced and sauteed with bell pepper, zucchini, onion, mushroom, garlic, with chili flakes and oregano.

Day 199

And tonight I'm gonna party like it's Day one ninety-nine! I am up and getting ready for class today. I don't have class on Fridays this quarter, isn't that great? I am on call for work tonight, but if I don't get called in I am going to go to the gym tonight and put in another couple hours of intense workout.

For Breakfast: Coffee. Two eggs. One piece of Toast.

Day 198

I went to the gym and worked out before class, like I said I was going to. I ran three miles on the treadmill and did it a a decent time. I never stopped. Then I did some weight machines and some other exercises I learned from our conditioning workouts. After my workouts I walked back up to campus and wen to class. I had another 1st day for one of my other classes. It's called Queer 101. It's a small focus group type class and it's taught through the Q center on campus. I have never even been to the Q center. It's the LBGT organization on campus and offers support, guidance and information for people. Cynthia in the CHID office said that it would be really interesting and I needed another two credits to fill out my schedule. For some reason I have never really been extremely involved with the outspoken activism part of my "alternative sexuality" this will be interesting class. I am excited.

I got home from class really hungry, I hadn't eaten since breakfast. I made myself a lunch/dinner. It was after-all, almost five o'clock.

For Lunch/Dinner: Veggie and Tofu stir-fry. I chopped up some zucchini, red bell pepper, broccoli, and shitake mushrooms and extra firm tofu. Sauteed it all up with some fresh garlic, sesame oil, and chili flakes. After it came off the heat I stirred in a few dashes of low sodium soy sauce and there you have it. It was great.

I did some things around the house and waited for Cassi to come home from work. She is finally feeling better. She didn't get home until later we ate a little something and went to bed after a while.

For Late Dinner: Nonfat vanilla yogurt and some granola. I also had a mini piece of pizza from Cassi's dinner. ( veggie pizza, with eggplant, tomato, basil, artichoke)

Some thing I am really going to try to focus on is my salt intake. I need to eat less slat and that is an important part to my health kick that I haven't thought about for a long time. I'm almost on day 200, and in the beginning I was really good about staying away from salt, but I have been slacking off and I am telling you to hold myself accountable. Lay off the Salt Katy!
