Day 206

For Breakfast: Nonfat Latte. Bran muffin.

Went to class today and did my presentation. It went well even though I can hardly talk because my throat is so bad. I haven't eaten anything else today, I'm not very hungry. I have the night off and no school tomorrow!

For Dinner: Vegan black bean soup from Trader Joes.

I spent the rest of the night in bed.

Day 205

For Breakfast: Two eggs, scrambled. One piece of toast. Coffee.

I slept horribly last night. I feel so sick and I had so much to do today, I couldn't stay home from class, but I should have.

I am finally home now, I am going to do some homework and try to get to bed early.

For Dinner: Whole Wheat penne with marinara and all natural chicken sausage.

Day 204

For Breakfast: Two eggs, and some thera-flu tea.

I still feel pretty bad today, but I had to go to school. The crumby part about today is that I realized I left my wallet in Arlington. I didn't have my bus pass and had to walk home from school.

I am heading up to a local restaurant to meet up with my thesis advisor, to talk about my project. It's getting close to the time when I will have to compile my blog journey into a cohesive project. I am excited, but a little nervous, it's going to be a lot of work.

For Dinner: All natural chicken breast roasted and paired with Brussels sprouts, a rich pistachio jus, and a butternut squash, pomegranate and house cured pancetta sauté.

Day 203

I woke up this morning really sick. I feel pretty awful, so I am at home relaxing and I am not going to go into work tonight.

For Breakfast: Omelette with some of the leftover ham, with bell peppers and mushrooms.

For Lunch: small bowl of cereal with skim milk. It's that Honey almond and flax 9 grain crunch.

For Dinner: I sauteed up a bit of that ham and some shitake mushrooms.

I didn't eat very much today because I am not feeling well. Cassi came home and we relaxed a little bit and then went to bed.

Day 202

Happy Easter!

For Breakfast: Scrambled eggs, canadian bacon, and a slice of my mom's Homemade bread. Coffee.

Cassi, Josh, and I had our Easter egg hunt. Yes, we still do it even though we're all in our twenties. I gave all my candy to Cassi and Josh, I need to stay on track. Mom, Cassi and I spent most of the day in the Kitchen. We prepped and cooked and of course, had a great time.

For Easter Dinner: Grilled halibut with a lemon beurre blanc. Mashed potatoes, Roasted Ham. Blistered Asparagus.  Homemade bread. Deviled eggs, and fresh veggies.

For Dessert: Mom made fresh strawberry sorbet, it was amazing. A fruit tart wit homemade vanilla pastry cream and Fresh strawberries, raspberries, and kiwi.

The whole day was fantastic!

Day 201

For Breakfast: Oatmeal and Coffee.

I went to work at 11:15.  I worked until 8:30 or so. It was a long day. Cassi and I drove up to Arlington for Easter after work. I am exhausted after a long day on my feet and its the only time when my knee gets a little sore.

For Lunch: a Bowl of Vegan Butternut Squash soup from work and fresh roll from the bakery.

For Dinner: Grilled chicken breast with Spicy sauce. Caesar salad with no cheese and easy easy dressing. Iget a free meal if I work a double shift. My buddies in the kitchen are all aware of my recent weight loss and health kick. They know just how I like it! I love those guys!

Day 200

200 days people! That's pretty insane! I feel really great. I weighed myself at the gym yesterday and I am at 31 official lbs.

For Breakfast: Mushroom, bell pepper, and zucchini scramble. Coffee.

Cassi volunteered today and I caught a ride with her down to the gym. I ran another 3 miles. I didn't think I was going to do it, because I got on the treadmill and felt really tired. I thought, 'maybe I'll jut do a mile' but  I buckled down and ran those three miles! I did a big weight work out and, again, I feel exhausted.

For Lunch: Romaine lettuce, hearts of palm, cannellini beans, slivered almonds and sauteed shitake mushrooms, tossed in a balsamic vinaigrette and topped with a grilled chicken breast. I also had a banana.

After a little while it was time to go into work. It was slow so I got cut, but after I got clocked out everybody got really busy, oh well.

For Dinner: Griddled octopus, potato, red onion, celery, with salt, pepper, parsely, lemon juice and extra virgin olive oil.

Day 199

Just got home from school and the gym. I am absolutely exhausted. I did another three miles on the treadmill, this time I did it 2 minutes faster than yesterday. I also did a challenging weight circuit. I just finished eating my late lunch.

For Lunch: Vegetarian taco salad. I chopped up some extra firm tofu, mushrooms and garlic. Sauteed in a pan with a some olive oil. I added black beans, chili powder, cayenne, cumin, salt, and pepper, a dash of salsa and fresh lime juice. I put this mixture atop a bed of fresh romaine. Yum, yum.

For Dinner: All Natural Smoked chicken and turkey Basil sausage diced and sauteed with bell pepper, zucchini, onion, mushroom, garlic, with chili flakes and oregano.

Day 199

And tonight I'm gonna party like it's Day one ninety-nine! I am up and getting ready for class today. I don't have class on Fridays this quarter, isn't that great? I am on call for work tonight, but if I don't get called in I am going to go to the gym tonight and put in another couple hours of intense workout.

For Breakfast: Coffee. Two eggs. One piece of Toast.

Day 198

I went to the gym and worked out before class, like I said I was going to. I ran three miles on the treadmill and did it a a decent time. I never stopped. Then I did some weight machines and some other exercises I learned from our conditioning workouts. After my workouts I walked back up to campus and wen to class. I had another 1st day for one of my other classes. It's called Queer 101. It's a small focus group type class and it's taught through the Q center on campus. I have never even been to the Q center. It's the LBGT organization on campus and offers support, guidance and information for people. Cynthia in the CHID office said that it would be really interesting and I needed another two credits to fill out my schedule. For some reason I have never really been extremely involved with the outspoken activism part of my "alternative sexuality" this will be interesting class. I am excited.

I got home from class really hungry, I hadn't eaten since breakfast. I made myself a lunch/dinner. It was after-all, almost five o'clock.

For Lunch/Dinner: Veggie and Tofu stir-fry. I chopped up some zucchini, red bell pepper, broccoli, and shitake mushrooms and extra firm tofu. Sauteed it all up with some fresh garlic, sesame oil, and chili flakes. After it came off the heat I stirred in a few dashes of low sodium soy sauce and there you have it. It was great.

I did some things around the house and waited for Cassi to come home from work. She is finally feeling better. She didn't get home until later we ate a little something and went to bed after a while.

For Late Dinner: Nonfat vanilla yogurt and some granola. I also had a mini piece of pizza from Cassi's dinner. ( veggie pizza, with eggplant, tomato, basil, artichoke)

Some thing I am really going to try to focus on is my salt intake. I need to eat less slat and that is an important part to my health kick that I haven't thought about for a long time. I'm almost on day 200, and in the beginning I was really good about staying away from salt, but I have been slacking off and I am telling you to hold myself accountable. Lay off the Salt Katy!
